On this opening day was originated the custom which has always prevailed in
opening a new restaurant: only free coffee and doughnuts from 9:00 A.M. until
5:00 P.M. after which food was served. surprised as they were, business was
pretty good that evening and from then on with 24 hour service.
The second location, 290 6th Avenue,
was equipped and opened November 11, 1920, following the same plan, and
free coffee and doughnuts were served from 9:00 A.M. until 5:00 P.M. on
this opening day.
H. King Cole called by phone this same
evening and said he was operating a restaurant at 221 4th Street in the
Elliott Hotel, but that he was very anxious to sell out, and requested a
call. By 9:00 A.M. the next morning Bolton & Hay owned a third
restaurant location, the lease having been transferred by Christian
& Hedrick, operators of the hotel. The evening Bolton & Hay ate
dinner at the newly acquired place. There was only one other customer
served, and he was pretty highly intoxicated. The third restaurant was
remodeled and opened January 1, 1921.
